Victory Helles Lager
Munich’s Very Own Brew
Victory Helles Lager is a product brewed by the Spaten Brewing of Munich. Its first product shipment was released in March 1894 in the city of Hamburg. Helles is a German word which means "light" which was a designation made based on the color of the beer. Victory Helles measures 4.7 to 5.4 percent alcohol by volume (ABV), and also has some higher alcohol versions, above 5% ABV, which are referred to as Export Helles. Some Helles carried the designation Urhell (Ur meaning original) or Urtyp-Helles (Urtyp meaning original type). The company uses this prefixes to emphasize the authenticity of its drink.
Helles Lager is brewed with only one type of pale malt and one type of hops. The simplicity of requiring only one brewing makes it less difficult to brew. This means that all the ingredients must be of higher quality and must be fresher than what most other beers would require. The pale pils malt has a low coloring rating of 1-1.5 degrees L.

Fermentation
The fermentation temperature for Helles Lager is about 48 degrees F (9 degrees C) and it is kept constant throughout the fermentation process, which is referred to as primary fermentation and can last to up-to two weeks.
Process
The beer is made by racking it into a clean conditioning container and putting it in a refrigerator. The temperature is then gradually lowered by 1 degree C (2 degrees F) a day and this might take another week or so. During this time, the brew undergoes secondary fermentation as well as sedimentation.
Then the brew is racked again for lagering, and the Helles Lager temperature does not exceed 37 degrees F. This is because low temperature makes for a better quality of beer. In the cooler, the Helles Lager develops its mellow smoothness. The yeast present helps absorb oxygen and thus makes the brew last longer.
