The History
Catoctin Creek Roundstone Rye is produced by the Catoctin Creek Distilling Company which was formed in 2009, a descendant of the first whiskey distillery to be legalized in Virginia since Prohibition. Along with Roundstone Rye, the company produces other spirits like gin and wine. The company’s drinks are certified organic; one of the only distilleries in the nation that can claim such promises.
How It's Made: Production
For a whiskey to be considered rye, it must be distilled from at least fifty-one percent rye and such is the case of the Catoctin Creek Roundstone Rye. The following are steps involved in the production of the whiskey:
- First and foremost, the mashing process takes place, and it involves a mixture of milled grain consisting of malted barley, corn, wheat, and most essentially rye from what is known as the grain bill.
- Water is then added to the mixture, and it is heated to a recommended temperature.
- The process of mashing is done again to enable the enzymes in the malt to form sugars by breaking down the starch in the grains.
- After the mashing process, the mixture is then distilled by US standards to 80% abv.
- It is then aged in charred oak barrels. The now to-be-aged whiskey must be put into barrels at no more than 62.5% abv.
Taste & Finish
Catoctin Creek Distilling Company is known for leaving the aging of the whiskey to the elements, rather than using artificial methods to speed up the process.
